Caramelized Salmon

So imagine it having a crunchy, beautiful outer crust, Cannot get better right? This is a recipe which can bowl over anyone with a single bite. Once, I had to make dinner for guests at a short notice and all I had in my pantry was fresh salmon.
I had no other choice, but to make this. Even though my friend who suggested this recipe swore by it, I honestly was quite apprehensive to serve it to my non salmon loving guests for dinner. So out of alternatives, I did serve them.
They were not thrilled by the dish, but was polite enough not to express it. Then it happened! The first taste, and all I heard was a slurp. It disappeared from the plate instantly. I used to normally make my mom’s meat loaf recipe when I entertain guests at home, but now it has changed to this awesome salmon. It is super easy to make and is a no doubt winner.
The main ingredients that you require to make this super yummy salmon are:
Olive Oil
Sugar : ½ cup
Sea salt : 2 ½ tablespoons preferably coarse but gently chopped /pulsed in a food processor
Black pepper: just a few dashes that are freshly pulsed.
Salmon : 16 Oz which are cut into equal fillets with skin
Combine black pepper, salt and sugar in a small bowl.
Coat each of the salmon fillets with the above mixture , by carefully dipping it in
Take olive oil in a big non-stick skillet and heat it over medium flame. Once the oil becomes hot, simmer down the heat and add the fish. Then sauté it for five minutes. (If there is too much of water content, then remember to drain it out using a spoon). If there is a lot of spattering, it would be better to bring the heat to the minimum.
Flip each salmon fillet carefully without breaking it. The skin over the fillet would help in holding it together. It would be ideal to sauté it for 2-3 mins on each side. Please use your discretion in doing so, as the cooking time hugely depends on the thickness of the fillets.
Preheat your oven/broiler to 450 degrees. Sprinkle each salmon fillet with ½ teaspoon of salt/sugar mixture. Then transfer into the hot oven and allow it to broil for 5 to 10 minutes. Please do check in between to ensure that it does not burn. It is completely normal for the skin to appear brown because of the caramelized sugar.
Once the fish is cooked through, remove from the oven and let it cool down. Then the skin could be taken off before eating or serving. Since it would already cooked well, it must be quite easy to take it out.
You could garnish it with Onions and parsley.
